Joe's Cooking Corner: Peanut Butter Chocolate Chip Cookies

The world's most handsome man baked the world's most delicious cookies for me the other day. Usually when he cooks or bakes, Joe likes to go way off book: adding maple syrup to almost anything, melted ice cream in place of milk, Refrigerator Surprise. But this time he followed the recipe almost exactly. With the exception of inaccurate measuring, the use of a potato masher, and the addition of orange and cream flavored crunchies to one half of the dough. 

Peanut Butter Chocolate Chip Cookies

As adapted from the recipe on the back of the bag.

Prep Time: ~13 mins

Bake Time: ~13 mins

Preheat:  350˚F

Yields: ~36 cookies

  • 1 stick of butter
  • 3/4 cup sugar
  • 1/3 cuip creamy peanut butter
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1-1/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup Hershey's Milk Chocolate Chips
  • 1 cup Reese's Peanut Butter Chips
  • Optional: Orange-and-cream flavored crunchies, various items from the pantry

First, without a mixer, he creamed together the butter, sugar, and peanut butter. Then, incorporated an egg and the vanilla extract. Next, he mixed together the flour, baking soda, and salt, and added all that to the dough. Last, so many chips!

Then he mixed it all together:

We put one tray of probably too-big spoonfuls into the 350 degree oven for 12 minutes, and they came out just a little underdone, as is my preference. The other tray had the half of the dough with the orange and cream crunchies inside plus chocolate crunchies sprinkled on top. That tray went in for 14 minutes, and still came out well. The special orange-and-cream surprise was only barely noticeable, so it wasn't too out-there.
